Tender, juicy and oh so yummy, this smoked turkey breast cooked on a pellet grill will become a family favorite.

16cupswater
1½cupskosher salt

1turkey breast(bone in)
2sticksbutter
1teaspoonblack pepper
1teaspoon rosemary
1teaspoon thyme

1teaspoonpoultry seasoning
Instructions
Brine
Combine the 16 cups water and the 1½ cups of Kosher salt. Immerse the turkey breast in this solution, cover and refrigerate for 12 hours.
Turkey
Preheat your grill to 225 degrees while preparing the turkey.
Remove breast from fridge and pat dry.
Mix together the butter, black pepper, salt, rosemary, thyme, garlic and poultry seasoning.
Pull skin of the breast back and spread the butter mixture under the skin.
Place the turkey in a disposable pan and put the pan on the bottom rack of your preheated smoker grill. I did have to remove the top rack for the pan to have a good clearance.
Set a timer for 2-1/2 hours. Check the internal temperature of the turkey breast. It should be approximately 140 degrees.
Reset the grill temperature to 300 degrees and cook for approximately 2 more hours. Check the temperature of the turkey halfway through. When the temperature reaches 160-165 degrees, it is done.
Remove your Trager Turkey Breast from the grill and allow it to rest for 30 minutes before slicing.
